Ingredients:

  • 2 cups whole-wheat flour

  • 1 cup old-fashioned oats

  • 1 tsp. baking soda

  • 1 tsp. pumpkin pie spice

  • 1/2 tsp. kosher salt

  • 1 15-oz. can pure pumpkin

  • 1 cup olive oil

  • 1 cup brown sugar

  • 1 large egg

  • 1/2 cup roasted salted pepitas

  • 1/2 cup dried cherries

Instructions:

  • Heat oven to 350°F. In a medium bowl, whisk together flour, oats, baking soda, pie spice, and salt.

  • Using an electric mixer, beat pumpkin, oil, sugar, and egg on medium to combine. Reduce speed to low; gradually incorporate flour mixture, then pepitas and cherries.

  • Scoop 16 mounds (about 1/3 cup each) onto parchment-lined baking sheets, spacing 2 in. apart; flatten into disks. Bake until dark brown on bottoms, 20 to 25 minutes. Transfer to wire rack to cool.

  • Make them ahead by storing the cookies in an airtight container up to 2 days or freezing them up to 2 weeks. Just reheat them in the toaster until crisp.
