Ingredients:

For the Stew:

  • 1 lb lean beef stew meat, trimmed and cubed

  • 1 tbsp olive oil

  • 1 medium onion, chopped

  • 2 cloves garlic, minced

  •  2 medium carrots, sliced

  •  1 cup celery, chopped

  • 1 medium apple, peeled and diced (choose a tart variety like Granny Smith)

  • 1 cup unsweetened apple cider

  • 2 cups low-sodium beef broth

  • 1 tbsp tomato paste

  •  1 tsp thyme

  • 1 tsp rosemary

  •  1 bay leaf

  •  1 cup green beans, trimmed and cut into 1-inch pieces

  •  Salt and pepper to taste

Optional Thickener:

  • 1 tbsp cornstarch mixed with 2 tbsp water (if a thicker consistency is desired)

Instructions:

    1. Brown the beef:

     Heat olive oil in a large pot over medium heat. Add beef cubes and brown on all sides for about 5–7 minutes. Remove the item from the pot and set it aside.

    1. Sauté the aromatics:

     In the same pot, add the onion and garlic. Cook until fragrant and softened, about 2–3 minutes.

    1. Add vegetables and liquid:

     Stir in carrots, celery, apple, apple cider, beef broth, tomato paste, thyme, rosemary, and the bay leaf. Return browned beef to the pot.

    1. Simmer until tender:

     Bring to a boil, then reduce the heat to low. Cover and let simmer for 1 to 1½ hours, or until the beef is tender.

    1. Add green beans:

     Stir in green beans during the last 10 minutes of cooking. If you prefer a thicker stew, mix in the cornstarch slurry and simmer for an additional few minutes, until the stew has reached the desired consistency.

    1. Season and serve:

     Remove bay leaf, adjust salt and pepper to taste, and serve warm. Enjoy as is or with a side of steamed veggies or a small portion of brown rice.
